We had such a good day today! Last night we stayed up until 1:30am playing Civilization 4, so this morning I slept until 10 or so, very nice. You really and truly don’t need to knead if you make a nice wet dough and let it sit around for a while. I tried some basic html alignment code which failed miserably) Edit: Ada suggested a table! Thanks, Ada!When we got home, I did some recording and LibriVox work (we’ve got 981 finished audio books!), and then we watched Knocked Up, which was very enjoyable. If only I’d remembered to take my benadryl last night, I would have slept great, ’cause Dan turned off the AC! As it was, I woke up at 6:30, wide awake, but because the room was so nice and quiet I was able to go back to semi-sleep till after 8am!Last week I got a book called “ No Need to Knead” from the library and it taught me how to make fantastic Italian-style bread. When you have an internet start-up in coastal California, you have:(if anyone can tell me how to align those two photos in a row, please let me know. Pesky switches tend to get rubbed by mistake and turn off in the worst possible moments. After Quail Gardens we stopped by Dan’s work to pick something up, and I got the tour of his new building.
After the dough has again risen in its bowl for a while, pre-heat the oven to 500F and then pour the dough into some kind of pan (I use my smaller cast-iron skillet, greased). Smack the dough with the back of a spoon till it deflates somewhat, then let it rise again. With the fridge method, take the dough out in the morning and let it come to room temperature. You don’t have to!Now, cover the bowl with a plate and refrigerate overnight or leave it alone for an hour or two on the counter. It’s completely un-kneadable, so don’t even try. This will make a very sticky wet dough that will just barely want to creep away from the edges of the bowl and almost form a ball. (I had checked online earlier and there was no mention of this fact, although the flight had been canceled at 9am) The very helpful American Airlines ticket agent sent us back and forth between various counters, and eventually got us booked standby on an 8pm Air Canada flight to Las Vegas, then a US Airways midnight flight from LV to San Diego. I just want to tell the story of our return journey before I forget:We got to the Montreal airport at 2:30pm and found out that our 4:30 flight to Chicago was canceled on account of weather. It’s just as good as the fancy Italian bread from Trader Joe’s! You can learn lots more variations and techniques from the book, so run out and beg/borrow/buy a copy right now! It’s Thursday noon and we’re home. Try it both ways and see which you prefer!I have baked a lot of bread in my life, but never never never have I made anything this good with so little work. The fridge method lets the yeast develop a bit more of a tangy flavor. I mix up the dough in the morning and bake it in the early afternoon. They had good food for sale and complimentary water, juice, coffee, etc. (Our fall-back plan was to leave Montreal at 6am the next morning, which would mean getting to the airport at 3am… Yeah.)The Air Canada flight was very very pleasant. So then we went through customs and security and found a nice restaurant to wait in and had some food, and then just waited and waited until they boarded our flight, and then found out that YES there was room for us on the plane! And they even managed to get two adjacent seats for me and Henry, and one nearby for Dan. Last Viewed 10 Minutes Ago $13 Off Samson Go Mic Usb Microphone And Pc Computers Movie About BeatrixHenry was feeling really sick and queasy so we grabbed a spare wheelchair and Dan pushed him (and carried all our stuff, as usual) all the way back to A14, the proper gate. When we got there I had a funny feeling about it so instead of just waiting until they called us to board, I went up to ask if we were in the right place, and we weren’t! The posted gate info for our flight was WRONG. They played two movies — Eregon, which delighted Henry (ghastly movie, but he loves it so) and then a sweet little movie about Beatrix Potter which I enjoyed very much.Landed in LV at 10:30, took a shuttle to the Other Terminal, and followed the signs to our flight at gate B12. Landed safely in SD around 3:30. It took a long long time for them to get ready to fly, but we finally took off around 2:30am (I think). They fiddled with the computers and got them fixed, but by they time the were fixed it was too late for our crew to fly again, so they called out a replacement crew. Sat on the runway for a long time, then drove back to the gate — computer problems. When I got older, I could fall asleep pretty well but couldn’t stay asleep, or get back to sleep if something woke me in the night. When I was younger, I’d have trouble falling asleep and would just lie there for hours, waiting. Dan and Henry are still sleeping :) Well, I guess I’ll go unpack, tidy up, and do all the dumb things I gotta do…I’ve always had trouble sleeping. Anyway we finally got home just before 5am.I slept until 11:30 this morning. If we’d missed it, we would have had to get a taxi, which I think would have cost a fortune, or waited in the airport for several more hours. It was very lucky for us that we caught it. Drcleaner mac apFinally, last week, I realized that I was actually sleeping WORSE than before I started taking lunesta — waking up anxious in the middle of almost every night and being unable to fall back asleep, waking very early, waking up with headaches, never feeling rested, etc. I switched from 1mg to 2mg, but that didn’t really help a whole lot. It worked well for me for a long time, but then seemed to lose effectiveness. It works well for Dan, and doesn’t make him goofy or groggy. Last summer, on Dan’s recommendation, I asked my doctor if I could try lunesta. ![]() I made a nice late breakfast for Dan, and then he went off to the RC aircraft field and I stayed home to get things done! I did two more LibriVox recordings and got all four recent ones edited, proofed, tagged, and uploaded AND got Joy’s 43-file collection of English Fairy Tales cataloged, AND did the Wii fitness test for the first time — fitness age = 57, lol. So that was a very nice way to start the day. Not only did I sleep well, but instead of waking up suddenly way too early, wide awake with no chance of falling back asleep, I woke up slowly and drowsily around 9:30. I hope I haven’t jinxed anything by blogging about it.Somehow I got enough sleep last night and I felt good all day and got a lot accomplished! I wish I knew why I slept well so I could recreate the conditions and sleep well on other nights. I had a great thing made of corn tortillas layered with cheese and beans and chicken with sour cream and guacamole. I stink at Wii baseball.Dan took me out to dinner at Anita’s, a nice casual Mexican place down on the coast.
